THE Rational Banqueting System comprises a one or more ClimaPlus Combi (CPC) combi steamers plus special plate racks, thermal hoods and (when using a countertop oven) a special trolley. Plated meals which have been prepared and blast chilled are loaded onto the trolleys and stored in a coldroom to enable the kitchen to finish most of the banquet well in advance.
Regeneration is carried out just prior to service in the CPC oven, requiring around five minutes to bring 100 dishes to serving temperature. The hot plated meals can then be either served immediately or stored for up to 20 minutes under the thermal hoods.
