Here are some tips for a successful barbecue:

n The location of the barbecue should be carefully selected to avoid accidents and the risk of fire and food contamination.

n Raw food should be prepared and cut in the kitchen. Keep refrigerated until required.

n Raw and prepared foods should be kept in separate storage containers and separate serving tongs should be used for each.

n Certain foods such as burgers and chicken legs should be grilled slowly to ensure that they are cooked through to the middle.

n Frozen poultry must be thoroughly thawed before cooking.

n Food for the very old, very young and sick people must be well cooked and not ‘rare'.

n Make sure the barbie is attended at all times.
