Bhatia takes on New Delhi consultancy
Vinay Kapoor, owner of designer hotel the Manor in New Delhi, has taken on Vineet Bhatia, chef-proprietor of the Michelin-starred Zaika in London, as a consultant.
Bhatia will advise on the hotel's new 36-seat restaurant, Mushq, which opened at the end of last year. He has devised a menu and spent time with both the front of house and kitchen brigades, sharing his cooking philosophy.
"Having spent eight years working in London, perfecting a new and modern style of Indian cuisine, I am excited at the prospect of taking it back to India," said Bhatia. He added that the word "mushq" translates as "wonderful aroma", and he aims to do justice to the word by offering a diverse range of dishes.
The menu will include a selection of Bhatia's signature dishes, such as dhungar machli tikka (tandoori-smoked salmon with spices, flavoured with mustard and dill) and kala murg (aromatic black spices and tamarind-marinated chicken with milk fritters, saffron and cardamom yogurt).
Head chef Mallik Arjun, who has recently spent a month working with Bhatia at Zaika, will oversee all the food at the hotel, which includes banqueting and room service.
