Carr wins Tuco/Tilda challenge

Tracy Carr, executive chef in the Loxley foodcourt at the University of Sheffield, has won this year's Tuco/Tilda Ethnic Challenge.

The competition, organised jointly by the University Catering Organisation (Tuco) and Tilda, involved cooking an ethnic-style meal for four people with a food budget of £20. Five finalists, selected from paper entries, took part in the two-hour cook-off at Blackpool and the Fylde College, Lancashire, last month.

Carr's winning menu was a starter of chicken spring rolls with a coconut sauce and mango salsa, a main course of marinated lamb with spiced aubergine, rice timbale, curried lamb jus and a coriander pesto. Her dessert was carrot pudding with orange and yogurt sauces.

In second place was Leanne Haberfield, head chef of the Felixstowe restaurant at the University of the West of England, and third was Jeff Stoddard, executive head chef in the Origins Bistro at the University of Kent.
