1. These are all English cheeses. Golden Cross is goats' milk cheese, Gospel Green is of Cheshire/Cheddar style and Beenleigh Blue is a sheeps' milk cheese.

3. As this bird is largely bred on special farms, this makes it a poultry item. Originally, when wild, it was feathered game.

4. An assortment of cleavers are the preference. The index finger should rest down the top of the blade to provide the best control.

5. Excellent stuffed and roasted, or cooked as mince, this was the name by which ox-heart was known.

13. The calf will have been killed too young - two-and-a-half to three months is the correct age. Nutritionally, the value will be very low.

14. (a) It is likely that you would be looking for a pig, as stores is a pig classification indicating young weaned pigs.

15. (c) This is a bookmaker. The meat should be a minute steak, underdone.
