Bites for buffets
MINI-samosas from Daloon are designed for buffets, parties and bar snacks.
They come with twodifferent fillings, with the spiced vegetable version costing about 15.5p each and the mild curried chicken and vegetable variety about 21p. The 30g samosas can be baked, deep- or shallow-fried, or grilled from frozen.
Other products in the Daloon range include mini-spring rolls, plus savoury and sweet pancake rolls.

No-meat burgers
QUORN burgers, already a successful retail product, are being launched in catering packs.
The 50g meat-substitute burgers have a low fat content and provide only 59 calories each.
They are packed in cases of 24 and cost about 25p each - much the same as a comparable meat burger.

HERBS IN A JAR
HERB Pastes are said to give the taste and aroma of fresh-picked herbs. Preserved in vegetable oil, the Knorr pastes come in six varieties: garlic, basil, tarragon, fine herbs, bouquet de Provence and bouquet a l'Italienne.
The herbs are highly concentrated, which means only a small quantity is needed to achieve a desired flavour.
Knorr Herb Pastes come in 340g glass jars and a two-jar case has a list price of £15.65.

Taste of the orient
SPICY Szechuan and Black Bean are two new Uncle Ben's sauces from Master Foods.
Spicy Szechuan sauce - a mixture of garlic, spices, chilli, tamarind and herbs - can be served with both chicken and beef. It can also be used as a base for stir-fry vegetables and egg noodle dishes.
Black Bean sauce can again be served with meat and poultry, as a flavouring for egg noodle dishes, or as an accompaniment to spare ribs.
Like the other Uncle Ben's sauces, the new varieties in jars yield 20-25 portions, costing about £14-£16.

SAUCY TRIO
THREE extra varieties are being added to Pritchitt's range of Over & Out Dispense System sauces - reduced calorie mayonnaise, English mustard and sweet pickle.
Like the existing six varieties, the new sauces come in 12g portion pots which can be opened with one hand. They cost about 5p per portion.

Premium chefs' sauces
SEVEN new sauces from Van den Bergh are claimed to give chefs a premium base to which they can add their own personal touches.
Called Garde d'Or, the range includes: hollandaise, demi-glace, au poivre, béarnaise, velouté, mushroom and white wine. They come in one-litre packs which have a shelf life of nine months and do not need to be refrigerated until opened. List price is £19.38 per case of six.

TWININGS CUPPA CHOICE
AMONG the newest products being shown by Twinings are speciality coffees in a choice of four blends - Colombian, Kenyan, Costa Rican and Old Java.
They come in sachets for both two- and eight-cup cafetiäre pots and in 50g, 70g and 85g sachets for pour and serve machines. As a guide to cost, a two-cup cafetiäre sachet is about 14p, while a 50g pour and serve sachet is about 45p.

McVitie's snack is under wraps
A NEW savoury snack will be launched by McVitie's at Hospitality Week, but is being kept secret until the show itself.
McVitie's already dominates the savoury snack biscuit market with a 53% retail share. The company believes its new product will emulate the success of its Mini Cheddars, currently growing at 35% per year.

Quality Scotch beef is the speciality of Coventry-based butcher Aubrey Allen.
The firm, which is a member of the National Association of Catering Butchers, uses beef that comes from the Ballindalloch herd in Aberdeenshire. Its suppliers are members of the Farm Assured Scheme, which ensures both hygiene and quality standards.

Butter puff blocks
ALL-butter puff pastry is the newest offering from Pin-it Pastry. Supplied frozen in blocks, it is suitable for both savoury and sweet recipes.

A whale ofa meal
MAKING a big splash are Bernard Matthews' Golden Whales, a product created particularly for caterers who serve children.
Golden Whales are the latest addition to a range of frozen shaped products, which includes Lamb Boomerangs and Turkey Dinosaurs. They are made of flaked white fish, covered in a crispy crumb.
Each whale provides an 80g portion and can be baked in 18-20 minutes or deep-fried in just three minutes. Golden Whales cost about 35p each.
