lBERGERAC - Vineyards around this pretty Dordogne town produce light, claret-style reds and dry appley whites, mainly from Bordeaux grapes. Monbazillac is the leading sweet wine of Bergerac, best on a par with good Sauternes.
lCAHORS - The famous red wine from the Lot must be made from 70% Malbec grapes. The finest Cahors is often made from 100% Malbec. Modern wine-making has softed this once savagely tannic "black wine".
lGaillac - From the banks of the Tarn near Albi. Excellent souce of originally flavoured wines thanks to use of local grape varieties: Mauzac and L'En de l'El for the whites, Braucol and Duras for the reds.
lJurancon - Just outside Pau in the foothills of the Pyrénées, source of the best white wines of the South-west. The sweet wines (Moelleux) are superb. Their perfect balance is achieved by several successive pickings of only the ripest grapes during the harvest.
lMadiran - In the hills 25 miles north of Pau, Madiran is home to the Tannat grape, which produces sturdy deep flavoured red wine needing long ageing. The best producers are Alain Brumont of ChÆ'teau Montus and Denis de Robillard of ChÆ'teau Peyros.
