Chef and waiter win Olympic places

A waiter from London and a chef from Cheltenham have each won a trip to Seoul, South Korea, to represent Great Britain in the Youth Skills Olympics later this year.

Lucy Hyder of the Bacchanalian Restaurant at the Hotel on the Park in Cheltenham, Gloucestershire, earned the right to represent Britain after winning a gold medal in the Heart of England Salon Culinaire competition.

The competition formed part of the Hospitality Week exhibition being held at the NEC in Birmingham this week.

Hyder cooked a three-course menu consisting of pan-fried scallops on wilted spinach with fennel royale and vanilla foam, ballotine of cornfed chicken on a Jerusalem artichoke mash with sherry cream, followed by apple tarte tatin with butterscotch sauce.

The young waiter joining her in Seoul is Kelly Young from Restaurant One-O-One at the Sheraton Park Tower in London's Knightsbridge.

Young had to serve a cocktail for two diners, followed by a starter, then prepare a flambé before continuing with the main course and dessert.
