Cooking Sherry now comes by the half bottle

Tim Jackson, owner of Halves (0584 877866) which specialises in half bottles of wine, makes no apologies for offering half bottles of sherry that has passed its drinking peak for cooking.

"I think," he writes in his Mail Order Update for Christmas, "that a bottle of sherry must be fresh and drunk at one sitting, and that the half bottles which I list are the perfect size."

He adds: "I have always sold the balance of a previous shipment as cooking sherry (normally to the restaurant trade). This enables us to offer the freshest possible wine for drinking."

He recommends an older Manzanilla with chicken and forest mushrooms. You can buy a "cooking" La Gitana Manzanilla at £2.65 a bottle (full case rate); or a Manzanilla Pasada at £3.70.
