Cooking up a storm

Capitalise on the latest Chinese food products by visiting Wing Yip's stand, the specialist food importer from the Far East and supplier of Chinese food, with four superstores across the country selling over 2,500 oriental products. It also has its own brand of spring rolls and sauces.

Kim's Food, specialises in producing frozen Chinese pancakes for crispy duck.

Brake Bros, will be showing its range of Indian and Chinese food products, as well as desserts and fine meat cuts. Stand personnel will be demonstrating the benefits of buying quality fresh water prawns sold nett of glaze. La Cremeria, the new deluxe ice cream, will be available, as well as the new look price list.

J.P.Ryan Frozen Foods, will be showing its range of organically grown frozen vegetables and herbs from cut beans to diced celeriac, under the Okohof brand. These only have to be thawed or heated slightly and can be served in cold salads or in hot meals. Over 17 different varieties of frozen herbs will also be on offer.

The new Mehico fresh salsa range will be on show at the Trustin Chilled stand. There are three varieties - a mild salsa with black olives and oregano; a medium salsa with red and green peppers and a hot salsa made with jalapeno peppers. Available in 1.22kg jars.

Also on the stand will be Kyin's new stir-fry range in six flavours - Black Bean, a Cantonese-style sauce with black beans and fresh peppers; Thai Green Curry, a sauce with coconut and lemongrass; Chinese Curry Sauce; Hong Kong Sweet and Sour sauce; Peking-style Spare Rib sauce and a spicy Thai Red Curry sauce.

Also on offer at Trustin Chilled will be Viceroy's fresh curry sauce in six varieties: Rogan Josh, Tikka Masala, Korma, Madras, Vindaloo and Jalfrezi. Available in 1.22kg jars.

Multivac, will be demonstrating a range of chamber machines which can be used to pack and seal a wide variety of food products. These include fresh or processed meats, cheese, fruit and vegetables, soups, sauces and ready meals. The array of machines ranges from compact table top models to larger, free standing models.

Foodstuffs are packed in film pouches, either in a vacuum or in a modified atmosphere. A hermetic seal ensures total hygiene and prevents cross contamination.

This means that seasonal produce can be bulk bought in greater volumes and fresh ingredients can be portioned and chilled for future use.

The Food Machinery Company will be demonstrating its range of machines. These include a samosa and spring roll machine which deposits the filling automatically and an automatic samosa and dumpling forming machine, which produces samosas, dumplings, ravioli, noodles, curry puff and egg rolls.

Cherry Valley Ducklings will be on display on the Cherry Valley Farms stand 455, 518. (Turn to pages 20-23 for a special insight into the company and its products.)

Hot chefs on show

Mohammed Aslam from the Aagrah chain of restaurants will be one of the star attractions at this year's cookery demonstration theatre when he will be tempting the crowd with Kashmiri dishes. A past winner of the International Indian Chef of the Year competition, his chain of restaurants also won the Booker Prize for Excellence.

Sponsored by British Meat, the cookery theatre will be demonstrating all kinds of ethnic cuisine.

Terry Tan from Yum Yum Thai Restaurant will be demonstrating Thai vegetable carving, while Orlando Satchell will be cooking Nouvelle Caribbean (also the name of his restaurant). He describes his style of cooking as: "A concept that morphs the colour, excitement and rich favours of the Caribbean with the flair and presentaion of high calibre French cuisine."

Other chefs who will be giving demonstrations include: Chef Wan, Malaysian Airlines; Matab Miah, Vujon Restaurants; Mansoor Ahmed, Tabaq Restaurant Kashmiri; Tony O'Reilly from British Meat and Robert Reuello, Shogun Teppan-Yaki.
