COOKING WITH FIRE

THE Dante series of char grills comes in five widths from 24 to 72 inches and can be floor-mounted or in a choice of standard counter or low profile counter with no rack under. Units can also be specified with either glo-stones or metal radiants as the heat transmission medium. Where it is planned to regularly cook delicate items such as fish, the radiant method is considered more satisfactory but if a variety of foods need cooking regularly, a dual unit which is interchangeable between the two methods can be specified. A conversion kit enables switch-over within 15 minutes.

A range of interchangeable grates, all of which are adjustable to four different cooking positions, enable foods to be sear-marked in various ways. Additional heat deflectors are also available to maximise evenness of heat distribution.

The use of air cooling on the char-grills, which are made of fully insulated, double wall stainless steel, is said to prevent internal components from burning out. Prices range from £2,045 to £5,150.
