CPC combi proves a corker in Cork
A Rational CPC oven is delivering phenomenal savings at the historic Clancy's Bar and Bistro in Cork, Ireland - and has effectively paid for itself within a year.
Clancy's is one of Ireland's oldest existing bars, a veritable treasure-house of high Victorian style, and has been serving the local community for over 150 years. But in the last decade the 4-story bar on Prince's Street is probably the most popular and sophisticated rendezvous in what is now a very modern European city.
"Twelve years ago we decided to take Clancy's into food in a big way," said executive chef James Grimes. "That's when we bought our first Rational ovens, and they've been working almost constantly ever since."
Those original ovens were still in daily use when James recognised the potentila of Rational's new CPC oven. "Perhaps the biggest breakthrough was in its extraordinary control of weight loss from meat cooking", he says.
"We bought, cooked and served over 25,000lbs of lamb and beef last year, and previously were typically getting around 35% weight loss after cooking in conventional combi ovens. With our first Rational CPC it's now down to 20%. For us, that represents a saving of about £7,000."
The establishment seems to get busier and busier, with up to 400 meals a day overall and anything up to 1600 la carte restaurant meals a week.
"We use it on a variety of modes for almost all our meats and seafood, from baby roast chickens and ducks to the local black puddings and fresh fish.
"All this on a single CPC-10 1/1 ten-grid oven. The older Rationals remain in daily use for vegetables and a variety of desserts, and as backups - although we've not needed them for that purpose."
