Cuts out combi scaling

A simple, effective means of controlling scale in steam and convection ovens is claimed for the Scalewatcher-ENiGMA descaling system introduced by Environmental Treatment Concepts. The system was fitted to two 40 rack Angelo Po combination ovens at the Seagull restaurant and complex in Brean, Somerset, which handles up to 2500 meals per day.

Catering equipment supplier Aspen Design recommended fitment of the Scalewatcher units onto the 22mm cold water feed into the ovens and within weeks, oven performance fully recovered. A small amount of scale still forming turns to a putty-like substance and drains to the bottom of the oven for easy removal as part of normal cleaning.
