Deadline approaches for entry to the 2003 Roux Scholarship
Fancy a three-month stage in a three-Michelin-starred restaurant of your choice? Of course you do. So hurry up and fill in your application form for the 2003 Roux Scholarship - deadline for entries is just a couple of weeks away (28 January).
Entrants must submit a recipe suitable for four people using four mackerel and accompanied by two garnishes. A breakdown of all the food costs, including the individual cost of each item, must accompany your entry. But those thinking of gilding the lily, beware: caviar, truffles or foie gras are not permitted.
The competition is aimed at professional chefs aged between 22 and 30 on 1 February. Judges, a veritable who's who of the British cooking scene, include David Nicholls of the Mandarin Oriental Hyde Park, London; Rowley Leigh of Kensington Place, London; Albert and Michel Roux (chairman of the judges); their sons Michel and Alain; Victor Ceserani; Brian Turner; Gary Rhodes; and Rick Stein.
