DID you know that spatchcock is a traditional 18th century way of preparing poussin and helps it to cook evenly on a barbecue?

Poussin can add spice to barbecues when prepared spatchcock style and marinated for extra flavour. What's more, you can buy poussin ready spatchcocked with a herb coating or ready flavoured in a Chinese or barbecue marinade. Or you can prepare one from a whole bird or slice it in two for ease of cooking. Recipes illustrating the spatchcock method are available.
