Five years after receiving its second star, Le Caldandre in Rubano, Italy, has been awarded a third Michelin star, according to the 2003 guide.

The restaurant is now one of three in Italy with three-star status. Also retaining three stars are All Sorriso in Soriso and Dal Pescatore in Canneto Sull'Oglio.

Three restaurants, the Sadler in Milan, Flipot in Torre Pellice and Mulinazzo in Sicily, were given two stars. Two-starred establishments Il Luogo di Aimo e Nadia in Milan and Dolada in Pieve D'Alpago both lost a star.

One Portuguese and seven Spanish restaurants were awarded stars for the first time, including Read's hotel restaurant in Mallorca run by British head chef Marc Fosh. Denis Martin at Vevey, Switzerland, has received a second star. Two stars were also given to three German restaurants: Careme in Aschaffenburg, Vendome in Bergisch-Gladback and Kastell in Wernberg-Koblitz.
