Malibu Corporation showed a selection of equipment from both its Carpigiani range of soft serve ice-cream dispensers and its table-top Perfect Fry unit for ventless frying of chips, nuggets, onion rings and other finger foods. Latest versions of the Perfect Fry have pre-programmable controls via a ten-number keypad for foolproof timing relative to different products.

When the food is cooked, the basket lifts out of the oil to drain, with a beeper sounding to alert staff. The unit's patented air filtration system is claimed to be more effective at odour control than any competitive unit. Other fitments include safety thermostat and built-in fire suppression system. Price: from £3,490 including £1,000 of food for use in the machine.
