Fryers Catering Services has developed a service for caterers which shows if kitchens are making optimum use of the cooking life of their oil. Oil usage figures are analysed against industry norms to indicate if inappropriate practices are occurring, with preventive action highlighted if necessary.

The service is part of a package called Promis - Professional Oil Management Information System - which includes such activities as checking thermostats, retraining staff and generally ensuring that best practice frying techniques are employed on a documented basis.
