Hamming it up
PARMA ham can be used in recipes such Parma Ham and Chicken Salad with Lemon Mayonnaise. Sizzle strips of chicken until crispy and golden and toss with fresh lettuce, celery, peppers, red onion and strips of Parma ham. Spoon on a lemon and wholegrain mustard mayonnaise dressing.
Traditional Parma ham carries the stamp of the Ducal crown - a five pointed coronet logo with Parma in the centre which is branded onto the ham's skin. It means that the ham has passed stringent curing regulations approved by the EU.
