Hooter makes a big noise

Hooters in downtown Nottingham with its slogan "The soon to be relatively famous" offers a varied menu of authentic dishes from American cut sirloin steak to Alaskan snow crab legs.

Alex Holmes says: "Hooters offers good quality, good value food and "over the top" service. About 75 per cent of our customers are aged 18 to 40 and at weekends we cater for group parties, whereas during the week our main custom is business lunches."

Opening hours are from Monday to Thursday from 12 noon to midnight; Friday and Saturday from 11.30am to 2am and on Sundays from 12 noon to 10.30pm. On Sundays, children eat for free. On average, the restaurant serves 2,500 meals a week.

Watson & Phillip is the sole supplier of dry goods, as well as selected chilled, frozen and ambient foods.

Holmes says: "Each week we use about 20 gallons of a butter-based sauce to coat the buffalo wings that are always on the menu and for which Hooters is famous. We have found Watson & Philip is the only supplier we can rely on for consistently good flavour butter."

The brand of butter he uses is Orchard Farm Pure Dairy Butter. He also uses Coleslaw and Potato Salad; Pinto Beans, similar to baked beans in tins which is added to chilli con carne and saltine crackers like crisps and used to decorate the plates. All these products are from Watson & Phillip.

Chips are Curly Fries by Lamb Weston - "They're a novelty factor and add a bit of fun to the plate. The kids love them. I fry them in Frimax oil which is long-lasting." On the menu, it describes the Curly Fries as "chips are fun again".

He also likes the Orchard Farm brand of pasta, particularly the tricolore variety, as it is easy to cook and doesn't stick.

Other products from Watson & Phillip include the House of Lords barbecue sauce and Bluecheese dressing.

Desserts are mainly by Sara Lee. They include Key Lime Pie Dessert, comprising a light biscuit base with a tangy lime sorbet filling topped with cream; strawberry and black cherry cheesecake; fruits of the forest and chocolate chip cheesecake.

Ice cream is Everest by Walls, in banana, strawberry and vanilla flavours.
