Imperial Catering Equipment Conveyor ovens using forced hot air are extremely fast at cooking menu items such as pizza, reheating pre-cooked meats, and baking off bakery items. Imperial Catering Equipment is the UK importer of Zesto cooking systems and will have the new 2416 electric conveyor oven on its stand. What makes this model stand out is that it is relatively compact in conveyor oven terms, at 1,219mm wide and 800mm deep. Despite the compact size of the oven, it still has 9kW heating elements. Lacor UK Although its name is new to Hotelympia, Lacor is one of the biggest manufacturers of cookware in Europe. As with many items of high-quality professional cookware, the Spanish-built Lacor pans are made with a sandwich construction to give both evenness of heat distribution and good conductivity. The sandwiching is one layer of aluminium for conductivity between two layers of stainless steel to give durability and a good cooking and cleaning surface. Lacor will be exhibiting in the Spanish Pavilion. Stand N3360 Contact 01636 822222

Lec A very well-known refrigeration brand in the domestic market, Lec is using Hotelympia to push ahead in the commercial sector. MKN Bratt pans are hugely important for high-volume cooking, for their versatility in cooking a lot of food - they can fry, boil, braise and steam. What takes the bratt pan a stage higher up the food production cycle is when it becomes a pressure bratt pan, allowing the same cooking functions to be performed but with much-reduced cook times. The MKN Optima range of pressure bratt pans will be on the MKN stand at Hotelympia, showing both the high production performance and ease of use they offer. Stand N3070 Contact 01709 380567

Moffat Catering Equipment Moffat is in the middle of a £1m rebranding exercise to show that, while it is universally known for its Scottish-engineered countering and food regeneration trolleys, it has evolved into a broad-based manufacturer of catering equipment for both the kitchen and front of house. Moffat will be using Hotelympia not only to showcase all its new equipment, but to explain to visitors how there is now a single umbrella brand and image for the 40-year-old company. Nelson Dish & Glasswashing For businesses that do not have a high throughput of glassware, it is tempting to use the dishwasher for both tableware and glassware, but often the result is streaked and dirty glassware. To help small operators afford a dedicated glasswasher, Nelson will be launching the Speedclean 40 at the show, offering a low-cost entry level to a glasswasher which has build and cleaning performance, but without the advanced glassware cleaning features of bigger and more expensive machines. Look out for the buy-one-get-one-free deal, too. Stand N3869 Contact 020 8993 6198

Pacojet Chefs who have a Pacojet have nothing but praise for the quality of puréed foods it can produce, from intensely flavoured sorbets to signature ice-creams. The Pacojet is very simple. Ingredients are frozen in a beaker that fits the machine. When the frozen ingredients are put into the machine, they are shaved down by a chopping blade that revolves at extremely high speed, to produce a very smooth and creamy consistency in the finished product, even if the principal ingredients were things as low-calorie as yogurt. Rational Combi-ovens are known for their steaming and tenderising features, but have never been thought of as delivering the unique meat flavour that comes from a chargrill. Rational is unveiling at Hotelympia an accessory with a coated surface that can chargrill in a combi-oven, giving the typical taste and appearance of menu items such as fresh steaks. Part of the appeal of this option for banqueting is that 100 steaks can be chargrilled in 11 minutes. Stand N1810 Contact 01582 480388

RH Hall While the basic microwave oven has an important role to play in the professional kitchen for food regeneration, combination microwave energy can perform all the functions of a conventional oven, but much more quickly. The new MMP170 and MMP220 stick blenders are compact, but offer Robot Coupe performance with a low entry price. In another move to recognise that smaller professional kitchens do not have big budgets for food-processing systems, the R400 range, which combines a food processor with a vegetable preparation machine through a combination of cutting discs, will also be launched at the show. Rowlett Rutland With many hotels preferring buffet-style breakfast service, it's normal to have a conveyor toaster in a big hotel, or a conventional two-slot toaster in a small hotel. The problem for hotels not big enough to justify a conveyor toaster is that a two-slot toaster can result in irritating breakfast queues for time-pressed guests. The answer from Rowlett Rutland is a four-slot toaster designed for the breakfast bar, where two slots are operated independently - this allows two guests to use the same toaster simultaneously. Another new product is an electric grater that, in addition to grating cheese quickly, can also produce fresh breadcrumbs. Stand N3311 Contact 01372 453633

ServEquip One of the biggest names in commercial ice-cream makers for the catering industry, Carpigiani, will be on the ServEquip stand showing how high-quality Italian-style ice-cream can be produced quickly, easily and profitably. One of the machines that will attract interest from the small to medium independent market of caterers will be the new counter-top machine which, from a compact footprint, can produce five ice-creams a minute. This unit, says ServEquip, is an entry-level machine that delivers Carpigiani quality ice-cream and an attractive profit margin at an accessible price.
