CELEBRITY CHEF Gordon Ramsay has selected a chamber machine from Multivac to vacuum pack foods and liquids at his new restaurant in Royal Hospital Road, London.

The A200 machines, which are suitable for small- to medium-sized hotel and restaurant kitchens, are used for packing a variety of foodstuffs used in Gordon Ramsay's classic French-style cuisine.

The restaurant opened in early September, but Ramsay has been using the Multivac equipment for about five years.

Ramsay says: "Everything in the restaurant is freshly prepared, but some of the recipes need to be prepared the day before and allowed to rest. For example, the meat matures in the vacuum pack and marinates in all the flavours. It saves time and money. It's a brilliant way of cooking and there's no wastage."

The stainless steel Multivac chamber machines are easy to clean and resistant to corrosion. The A200 features a removable seal bar to make cleaning even easier.
