It's souper

Well known chef Colin Capon passes on some useful tips on soups and gravies including how to jazz up powdered soups and use them as a base for other dishes such as chow mien.

  • Add ingredients to powdered soups - asparagus stalk pieces to an asparagus soup to give extra crunch and texture.

  • Powdered soups are versatile: turn a chicken noodle soup into chow mein or serve oxtail soup with chicken.

  • Use powdered soups as a topping. Dust it over puff pastry or a savoury crumble to give flavour and colour. Tomato bread rolls can be enhanced with soup powder, and oxtail soup powder can be added to suet puddings to give extra pizzazz.
