The new Junior Chef of Wales is Gareth Dwyer, commis chef at Maes-y-Neuadd country house hotel in Talsarnau, Gwynedd.

Dwyer, 22, won the title at the Welsh International Salon in Llandudno after cooking a three-course meal for four people during the three-hour final.

His winning dishes included hot smoked salmon on a bed of Jerusalem artichoke with Conway mussel nage; pencil fillet of Lynn beef wrapped in horseradish mousse, with braised root vegetables and mustard mash; and mint mousse with apple wafers and bara brith ice-cream.

As well as carrying off the trophy, Dwyer won £500 cash and the opportunity to travel to Glasgow with the Welsh Culinary Team for Scothot.
