Kitchen-scale cabinet launch
GRAM, the subject of this month's Supplier Profile on page 53, has extended its range of blast chiller/freezers to include cabinet models suited to general daily use in restaurant and pub kitchens. Until now, the company has only made large roll-in cabinets suited to cook-chill applications.
Designated KPS18 and KPS30, the new cabinets are rated to handle 18 and 30 kg respectively, reducing food from 70ºC to 3ºC within the 90 minutes specified in the cook-chill guidelines. Freezing is also possible using the simple pre-programmed controls. Non-timed chilling and freezing can be carried out using the built-in core temperature probe.
Internal racks suit both Gastronorm 1/1 pans and 600 x 400mm Euronorm baking trays. A cabinet height of 900mm makes it possible to suite the cabinet alongside kitchen tables for maximum use of kitchen space. Prices are expected to start at around £3,500.
