A "21st century kitchen in an 18th century listed building" was the challenge facing chef-proprietor Terry Laybourne in his development of Brasserie 21 in a converted shipping line office at Wylam Wharf in Sunderland. Centrepiece of the kitchen is an island cantilever range from the new series made by Zanussi Professional, chosen for its ease of cleaning and its modular adaptability should changes prove necessary on the menu at a later date.
Special challenges involved drainage - entailing raising the kitchen floor by 2 inches - and the lack of straight lines within the building, which required most equipment to be fabricated and adapted to fit on site. All Zanussi equipment was supplied with a standard two-year warranty.
