MAJOR FEAST
BANQUETING service for up to 180 covers can be provided by a single 20 level combi-steamer when used as part of the Hobart Banquet system, which includes trolleys and isothermic insulated jackets able to hold regenerated plated meals at 70¼C for up to 20 minutes. The first 60 pre-plated meals are stored and then jacketed in a transport trolley which maintains serving temperature for up to 20 minutes.
Once the second batch of 60 meals has been regenerated, service can begin with the final 60 plates regenerated while the first 120 are being served. The banqueting system can be used with 6, 10 and 20 grid capacity combis, in each case helping to de-skill service while giving the chef greater control.
