Danish Distillers' Heering cherry liqueur is among the products currently featured at a Danish festival at the George Inter-Continental Hotel, Edinburgh. It is a key ingredient of the classic cocktail Singapore Sling: one part cherry liqueur, one part gin, 1/3 part Benedictine, two dashes of bitters, fresh lemon juice, soda and ice.

Chilean wines are rapidly growing in popularity in the UK. By the end of August this year, 494,751 cases had been exported to the UK compared with 450,000 in the whole of 1993. In 1995, an even more expensive campaign is planned. It will include all of the 34 Chilean wineries now supplying wine to the UK.

Don't miss Caterer's Guess the Grape Competition on stand F300 at the World of Hospitality Show, NEC Birmingham (23-26 January).
The prize is a trip for two to Champagne as a guest of the Champagne Information Bureau. All you have to do to win is identify the grape in each of four wines that you will be asked to taste, and spot the country of origin. Then, suggest a dish to go with each wine.
The wines and your suggestions will be revealed and analysed in Caterer in February.
Christmas Pud Ale
The fifth in Whitbread's series of cask beer, released this month, is Christmas Pudding ale. It is described as a "spiced ale", combining lemon and blackcurrant flavours of the Bramling Cross hop with an assortment of hops. It will be available for a limited period at Whitbread and free trade pubs. It should retail at £1.70 a pint.
