### Hotels The four-star, 143-bedroom Vale hotel, golf and country club in Hensol, near Cardiff, has made three promotions and one new appointment at its Lakes restaurant. Head chef Simon Daniel has become head of food and beverage, senior sous chef Justin Llewelyn has been made head chef, and junior sous chef Wayne Tapscott has become senior sous chef. Also joining them is Russell Rogers as junior sous chef, from the Feathers Hotel in Ludlow, Shropshire, where he was senior chef de partie. Marriott has appointed two new members of staff for its 301-bedroom London Marriott Hotel West India Quay, due to open next spring. Paul Downing takes on the role of general manager and David Bartlett that of director of marketing. Paul, who has more than 20-years' experience working for Marriott, joins from the Lisbon Marriott, Portugal, where he held the same position. David leaves the Renaissance Manchester Hotel, where he was director of sales and marketing. Moat House Hotels has promoted Gillian Robinson, operations manager at the Sloane Square Moat House in London, to the position of general manager at its 72-bedroom Winchester Moat House.

Glen Watson has joined the five-star, 186-bedroom Sofitel St James in London as executive chef. He previously spent three
years as executive head chef at the Marriott Hanbury Manor hotel in Ware, Hertfordshire. The five-star, 188-bedroom Rocco Forte Balmoral hotel in Edinburgh has welcomed Manuela Calchini-Smith as incentive and leisure sales manager. Previously, Manuela was incentive manager at Yes Incentives and Conferences. ### Restaurants Frankie and Benny's has made two new general manager appointments for its new restaurants at the Xscape complex in Castleford, West Yorkshire, and the Trafford Centre in Manchester. Both Jane Thursfield and Colette Williams have been with the company since 1998. Jane joins the 143-seat Castleford restaurant from the Sheffield restaurant, where she held the same position. Colette joins the 190-seat Manchester restaurant, having been a general manager at two other Frankie & Benny's, and has most recently been training staff in the Cheshire region. ### Contract catering

Charlton House has promoted two of its employees. Paul Hurren, a senior operations manager, has been promoted to divisional director, and Paul Jackson, an operations manager, has been promoted to senior operations manager. ### Plus… Leigh Kimsey has moved to conference and events venue Oakley Hall in Basingstoke, Hampshire, as executive head chef for its new Austen's restaurant.
