Pizza at the Palace
A complete makeover or of the kitchens of Buckingham Palace, which deal with dining functions up to 350 and canapes for 1500, has led to the introduction of an improved ventilation system and various new items of equipment. These include a Compacta gas deck oven in the royal pastry area to produce rolls, morning goods and pizza bases.
Factors behind the choice of oven included its independent controls for top and bottom heat and independent temperature control for each deck, plus significant energy savings and durable stainless steel outer shell and baking chamber.
