IB Food has added two varieties of risotto rice to its range of artisan Italian ingredients.

Carnaroli rice is regarded by many Italian chefs as the best grain to use in a risotto, where a soft and creamy consistency is desired, because of the high level of starch. The second variety is Vialone Nano, which cooks to a slightly firmer texture than Carnaroli, making it better suited to more full-bodied risottos.

Carnaroli comes in 500g bags and Vialone Nano in 1kg bags.

Prices: Carnaroli, £1.70 per bag; Vialone Nano, £2.20 per bag
