Named after an ancient Celtic festival with its roots in Hallowe'en, Samhain is a new Brie-style cheese made by Caws Celtica on its 400-year-old Capel Gwnda farm in Wales. Made with milk from the farm's 200 sheep, the 150g rounds are sold by cheesemaker Sue Hilditch very fresh after only a 10-day process - and so are made mainly to order. Caterers can expect the cheese to last another two weeks - the colder the storage, the longer it lasts.
