It's the end of a hard day in the kitchen. Everyone is worn out, the combi has been going full tilt and all the staff want is to get off home.

But there's the cleaning up to do and that cannot be skimped. Wouldn't it be marvellous if the combi could clean itself?

Well, now they can! Rational's ClimaPlus Combi is now fitted with the company's patented CleanJet which revolutionises the cleaning process. In appearance and operation, it could be described a benign alien in the belly of the oven.

Simply hang the robotic cleaning arm of the CleanJet on its housing inside the machine, spray the inside with cleaning materials, turn on the power and off it goes. Using a combination of detergent and rinsing agent, the intelligent cleaning programme will clean the insides while you get on with something else - or go home!

The arm is designed to rinse away all the materials and waste by saturating the interior with water using rotating spray nozzles and methodically moving up and down throughout the cabinet. It softens up encrusted dirt and completely dissolves particles and limescale residue in the cabinet.

A variety of standard cleaning programmes are available from a very light one after cooking "clean" bakery products through to a mega blast for heavy soiling caused by cooking meat and starchy, sugary spicy foods

Cleaning times are said to be faster than normal cleaning cycle in conventional combis, ranging from 21 minutes to 95 minutes. The deepest cleaning cycle for severe soiling takes up to133 minutes.

Rational reckons the development can cut the chef's cleaning time by 90 per cent, thereby making great savings on cost.

And says the company, the CleanJet is more efficient than cleaning by hand. In tests on a CPC61 (six grid oven) the WFK Institute at Krefeld, Germany, described the CleanJet's results as "outstanding compared to traditional methods".

The system gives guaranteed compliance with HACCP and protects operators from unnecessary exposure to cleaning materials.

The system is being fitted to all new CPC ovens, both electric and gas along with a related development, CalcDiagnosis, a technology which slows the accumulation of limescale in CPC ovens and alerts the user when the steam generator needs descaling.
