THE World Association of Cooks Societies (WACS) chefs' conference will be among the highlights of ScotHot 99, which takes place at the Scottish Exhibition and Conference Centre (SECC), Glasgow, from 15 to 18 March.

Topics to be discussed at the conference, organised by the Federation of Chefs Scotland and WACS, include the increasing demand for international cooking styles; craft training - Government-backed education versus private schools; and the decline in kitchen-prepared food.

The conference will take place on Monday 15 March between 3pm and 4.30pm in the Ness Suite at the SECC.
