Fish dishes can be created quickly and easily with the new Signature range of fresh fish from M&J Seafoods.
The range has been developed in association with the Craft Guild of Chefs to include high quality cuts of fresh fish.
It includes Square-Cut Supremes, with the skin on, descaled and pin-boned cut from grouper, red snapper, king fish, barracuda, organic salmon and farmed cod. These are in 140 to 170g portions or 170 to 200g portions, with ten to a box.
Butterfly Fillets, which are suitable for filling. These are supplied with the skin on, descaled and pin-boned from sea bass and gilt head bream, in 170 to 200g portions with ten to a box.
Tournedos cut from prime loins to give dishes height, skinless and boneless, from tuna, marlin and swordfish, in a choice of 140 to 170g or 170g to 200g portions, with ten to a box.
Paves - this traditional cut is sometimes known as a roast, from halibut, plaice, brill, lemon sole, turbot, monkfish in 170g to 200g portions, with ten to a box.

Trout and Cod Roll - skinless fillets of trout and cod rolled together in 150g portions, with ten to a box.
Sea Bass and Scallop Roulade - descaled and pin-boned sea bass fillet wrapped around two roe-on unsoaked scallops in 150g portions, with ten to a box.
Salmon & Seaweed Tower - salmon fillet rolled with a seaweed filling in 170g portions, with ten to a box.
Fresh seaweed gives added flavour to many dishes, has a three month shelf life and can be used as an ingredient or garnish. This is available in six varieties - Nori as used in sushi; Sea Lettuce, which deep fries well; Wakame with a slight oyster flavour, for serving as a vegetable; Sea Spaghetti for use like a green bean for mixing into pasta and salads; Royal Kombu with a large, wide leaf; Dulse red seaweed with a nutty taste. All packed in 1kg boxes.
