Space is at a premium in busy kitchens, so it isn't always practical or necessary to squeeze in more shelves or prep tables. One new solution from the USA is a stainless-steel retractable unit, available either as shelves or as a work surface, that folds up against the wall, ready to be pulled down when it is needed. The units are heavy-duty, with shelves able to support weights up to 275lb and work surfaces 500lb.
