London's Westminster College, which claims to be the first UK catering school to offer full time Chinese cooking courses, has chosen new UK-made Falcon Wok Cooking Stations as a prime cooking resource for students. The new gas series comprises three models - 2, 3 and 5 burner - each fitted with six-jet burners capable of delivering up to 60,000 BTU/hour for intense wok cooking plus twin bar 30,000 BTU/hour burners for simmering. Both burner types have a 50 per cent turndown provision for extra controllability.

Ranges are priced at £2,393 (2 burner), £2,660 (3 burner) and £3,726 (5 burner). A spray bar provides a constant flow water over the hob to keep surfaces cool and clean. More powerful burners (9 or 12 jet) are optionally available while a triple bar burner can be specified for extra flexibility. Other options include clip-on front spice box, clip-on side shelf and cast aluminium setting rings.
