Vincotto is a natural, preservative-free ingredient from Italy, a kind of sweet vinegar that is made by boiling down dried grapes to one-fifth of their initial volume. This syrup is poured into oak barrels with a starter vinegar and then aged for four years.

It is often used in dressings, but can be drizzled over roast meats, fish, desserts and fruit. Vincotto is available in the UK in eight flavours including original, fig, lemon, hot pepper and orange.
