The Caines scrutiny
Described by the AA as "Paul Henderson's masterpiece of a hotel", the five-rosette Gidleigh Park, which was promoted to two Michelin stars last year, is without doubt one of Britain's most prized establishments.
In association with Caterer & Hotelkeeper and British Meat, chef-director Michael Caines has agreed to host an industry lunch on 28 February for 40 people. Like previous Chef Eats Out venues (including Le Manoir aux Quat'Saisons in Great Milton, Oxfordshire, L'Ortolan in Shinfield, Berkshire, and Heathcote's in Longridge, Lancashire), Gidleigh Park, in Chagford, Devon, promises to indulge its visitors.
Caines has devised an impressive seven-course tasting menu for just £45 including wine, featuring pan-fried scallop on a bed of tomato concassé with tapenade, tomato and aubergine caviare vinaigrette, terrine of rabbit and foie gras with a lentil and grain mustard vinaigrette, pan-fried veal sweetbreads with a sherry cream sauce, asparagus and a light veal jus, and passion fruit mousse with fruit salad of pineapple, pawpaw and mango with rice pudding ice-cream and coconut tuile.
Guests will be asked to arrive at Gidleigh Park at 12pm, and after lunch Caines will give readers a tour of his kitchen and offer an insight into the workings of his award-wining property.
