The island's solution
LOCATED on on the River Thames between Kingston and Surbiton, Raven's Ait Island has no access to gas and the two function rooms on the island suffer severe space limitations. Yet they deal with up to 320 guests and host nearly 90 functions a year.
To deal with the numbers head chef Dean Emin relies on a version of the Convotherm plated banqueting system, based around a 20:10P Perfect electric combi-oven. This has oversized shelves and larger-than-average spacing between grids for optimum capacity, plus "closed system" technology for automatic moisture control when regenerating plated meals.
