A collection of four New Zealand lamb cuts is the latest offering from Bernard Matthews under the Fine Dining brand. The Four Rib Lamb Rack is available at an average weight of 185g. It is easy to handle as it is frozen in vacuum packs of two, in seven packs to a case. The Rib can be presented as a four rib rack or cut into cutlets.

The Boneless Lamb Loin can be used in a variety of recipes - pan-fried or en croute. All fat and silverskin has been removed and there are four 116-169g loins per vacuum pack, with fur packs to the case.

The Lamb Hind Shank can be used as the main ingredient in dishes such as Greek kleftiko and can be served braised with garlic mashed potato and a rich redcurrant sauce. Each Shank weighs 350g to 450g. Available vacuum-packed in twos, with four packs per case.

Lamb Chump Steak is an original cut and is an alternative to steak. It can be cooked andpresented as it is supplied or, for example, cut into a "fan" for a more stylish presentation. Pan-fried, griddled, oven baked or even combi microwaved, it offers a variety of choices of presentation. Each Chump weighs 200g to 250g. Individually vacuum packed in cases of 12.
