Thinking big with ice

THE Big Serlui, one of the latest cocktail trends, should bring a warm glow to the wallets of the refrigeration industry.

It is described as an "ice-blocktail" and features a large block of specially created ice which is hollowed and filled with a choice of cocktails.

The name comes from Dave Serlui, group bar manager at London's Match bar, whose concepts also include Match Champagne McNuggets, an ice filled Perspex box of six or nine double shot-sized glasses filled with champagne cocktails.
