Three make Flavour shortlist

Three establishments have been shortlisted for the Flavour of Scotland category in the 2002 Scottish Thistle Awards. Fouters Bistro in Ayr, the Old Pines restaurant with rooms in Spean Bridge, Inverness-shire, and the Scotch Whisky Heritage Centre in Edinburgh have been serving quality Scottish produce for 28, 12 and 14 years respectively and all are committed to the Natural Cooking of Scotland initiative, which aims to improve the quality of food available to visitors to Scotland.

Judges for the Caterer & Hotelkeeper-sponsored category of the annual awards, run by VisitScotland, will be looking for evidence of fresh, seasonal Scottish produce being served in a welcoming and customer-friendly environment, and ways in which the operators have used quality produce to drive the business forward.

The award, along with the other 13 categories created to recognise excellence, professionalism, creativity and vision across the tourism industry, will be presented at a ceremony and gala dinner at the Edinburgh International Conference Centre on 25 October, when the three finalists will be hoping to follow in the footsteps of last year's winner, the family-run Monachyle Mhor hotel in the Brae of Balquhidder in Perthshire.
