Tunnel and deck ovens

Tunnel and deck ovens

For large volume pizza baking at minimal labour costs, the Synthesis V range of ventilated tunnel ovens made by the Italian company Zanolli employs a patented system of hot air flow which is claimed to provide very consistent heat distribution.

This enables pizza to be baked at lower temperatures than those of traditional ovens, thus reducing energy costs. Ovens come in gas and electric from a table top unit with 29 inch belt, priced from £3500, up to up to full-size models costing £15,000.

UK suppliers Euroquip also markets deck-style gas pizza ovens made by Genovese & Giacomini at prices from £1,800 to £2,700 and electric single deck ovens from £350 to £3,500. Pizza-making accessories include dough rollers capable of producing pizza bases up to 16 inch diameter (price £950), dough rounders and presses plus various mixing and veg prep machines.
