Many pesticides are formulated so they will not wash off growing vegetables during heavy rain. This is good news for growers but a concern for caterers, since it follows that tap water won't wash away the contaminants either. Drywite - known for its product that keeps chips white before blanching - has moved into the vegetable-washing area with Fresh Produce Wash, which will kill pathogenic bacteria on the surface of vegetables.

After being doused in a solution, vegetables are, claim Drywite, free from soil residues, pesticides and fertilisers.

The mix is chlorine-free and of food-grade quality, leaving no taste or taint. It comes in 2.5-litre containers with a recommended dilution of 40ml of washing agent to four litres of water.

The price is 17p per wash cycle.
