Fish dish Genuine Portuguese copper cataplanas, a traditional cooking vessel used in the Algarve region, are now available to restaurants to enable dishes such as clams and mussels to be cooked in oven-to-table fashion. The hinged, clam-like metal pans work in an analogous way to a pressure cooker when they are loaded with food and placed in a hot oven.

Individual portion cataplanas of 15.5cm diameter are available plus larger 33cm versions. As well as steamed fish dishes, the pans can also be employed on meat and poultry recipes. Going to pot The Pot Boy rotating electric brush system has long been a useful cleaning adjunct to the kitchen sink wherever a lot of pots and pans are used daily. All the operator has to do is guide the powered nylon brush head round the item to be cleaned, controlling its use with a pneumatic foot switch. The hose has a reach of up to 1.5 metres. Connected to a 13amp supply, Pot Boy is said to be totally safe because the brush head is driven by a hydraulic circuit which provides both electrical isolation and overload protection. To deal with the cleaning of larger, fixed items of kitchen equipment, such as griddles, brat pans and ranges, a Pot Boy can be ordered with an optional mobile trolley and basket for convenient movement around the kitchen. Price: £160.

The clean machine A new design of rocking wash arm works in conjunction with high performance water jets to deal with stubborn deposits on pots, pans and other utensils in the Winterhalter GS660 utensil washer. Coarse debris washed off the utensils is trapped in a filter cassette which can be removed during a wash cycle if necessary. Additionally, a Cyclo Mediamat continuous filter is provided to remove fine particles from the water and prevent accumulation of dirt in the machine.

The GS660 is capable of taking 600 x 1000mm trays with a space-saving split lift and fold-down door providing an entry height of 830mm to accommodate a wide range of utensils from small crocks to large pans and trays. Machines can be obtained on competitive leasing rates of around £6 per day.
