Wilson wins Bladen prize

A recipe for Bladen Cheddar and wild salmon tarte tatin has won the Bladen 2003 Cheese Masters Competition.

Created by Mike Wilson, executive chef at the Damson Dene hotel in Crosthwaite, Cumbria, the dish was judged to make the best use of Bladen cheese and to be the easiest for caterers to re-create.

The competition is organised by cheese supplier Glanbia Foods, which manufactures Bladen cheeses. Judges were looking for taste, innovation and the suitability of the dish for catering.

Wilson's prize is a one-day chef's course at L'Ecole de Cuisine at Le Manoir aux Quat'Saisons, an evening meal at Le Manoir and one night's accommodation there.
