Young waiters win through at Academy of Culinary Arts final

Nine young UK waiters have gained the standard required for the Academy of Culinary Arts' Annual Awards of Excellence.

They are Carolin Hackenberg from Le Manoir aux Quat'Saisons, Great Milton, Oxfordshire; Gaetan Morillon from Mortons, London; Ashley Shaw from Claridge's, London; Thibaut Delubac from Orrery, London; William Cristanelli from the Ritz, London; Paul Shanahan from Chewton Glen, New Milton, Hampshire; Trudy Mallin from Andrew Fairlie at Gleneagles, Auchterarder, Perthshire; and Aline Corbiere and Alison Pratt, both from the Gleneagles hotel.

The yearly awards, split into three categories - chefs, pastry chefs and waiters - are aimed at professionals under 26 and require competitors to achieve a preset standard of excellence by scoring 70% or better in a series of tests of their culinary and service skills in their specialist areas.

This year's service final took place at London's Le Gavroche restaurant 10 days ago. See next week's issue of Caterer for the results of the pastry and hot kitchen chefs' finals.
