Former Flor head baker Helen Evans has raised more than £11,705 towards opening a new bakery in East Dulwich in London.

Evans has already exceeded her £10,000 target, which will go towards a dough mixer and a pastry sheeter and said the stretch target of £15,000 would help finance a makeover of the annex space, turning it into a seating area for dine-in customers and workshop guests. Further funds would go towards tables, chairs and an espresso machine.

Eric's Bakery is expected to open by mid-March at 20 Upland Road at the former site of the South East Cakery & Café.

"My goal is a small neighbourhood bakery committed to championing UK-grown wheat, and perhaps more importantly, only wheat that is a product of low to no-input and organic farming systems," said Evans.

The bakery will offer sourdough breads and breakfast pastries alongside topped focacce, doughnuts, other sweet and savoury treats and coffee, and will also host workshops.

Evans was head of bread and pastry for Flor and Lyle's and oversaw Flor Bakery in Bermondsey, which opened last year, however the venue closed last month.
