Jack Newton named first permanent head chef at Half Cut Market

Kentish Town restaurant Half Cut Market has named Jack Newton as its first permanent head chef.

Newton previously led the kitchen at the Hen's Teeth in Dublin and will take over curation of the London restaurant's menu this month.

The 30-year-old chef originally hails from County Kildare and studied graphic design at London's UAL before moving back to Dublin in 2018 to pursue a culinary career.

He worked at popular Dublin restaurant group Brother Hubbard before joining the Hen's Teeth in 2019 and then small plate venue Host in late 2021.

Newton then went freelance and worked at Bread41 and Note Wine Bar, both in Dublin, and spent time cooking in Europe.

His food at Half Cut will include dishes he "likes to eat himself", including mortadella, kimchi focaccia and black garlic aioli; jalapeno panisse, pepper salsa and parmesan; and Danish panna cotta with fig leaf syrup, elderflower, and strawberry.

He has worked on the launch menu with chef consultant Jay Morjaria, who hosted a sold-out guest stint at the restaurant in 2022.

Half Cut was founded in late 2021 by four north London friends whose hospitality background included time spent at Noble Rot, the Marksman and 40FT Brewery. Its kitchen previously hosted a series of rotating guest chef pop-ups.
